Infused Coconut Curry Soup with Sweet Potato
Introduction
This soul-warming soup combines bold curry spices with the natural sweetness of roasted sweet potatoes and a mellow cannabis oil infusion. Comfort food that chills you out in more ways than one.
Ingredients
- 1 tbsp cannabis-infused coconut oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tbsp red curry paste
- 1 large sweet potato, peeled and cubed
- 1 can coconut milk
- 2 cups vegetable broth
- Salt to taste
- Lime wedges and cilantro for garnish
Instructions
- In a pot, heat infused oil over medium heat. Add onion and garlic, sauté until soft.
- Stir in curry paste, then add sweet potato, coconut milk, and broth.
- Simmer until potatoes are tender (~20 mins). Blend if desired.
- Garnish and serve hot.
