Infused Coconut Curry Soup with Sweet Potato

Introduction

This soul-warming soup combines bold curry spices with the natural sweetness of roasted sweet potatoes and a mellow cannabis oil infusion. Comfort food that chills you out in more ways than one.

Ingredients

  • 1 tbsp cannabis-infused coconut oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp red curry paste
  • 1 large sweet potato, peeled and cubed
  • 1 can coconut milk
  • 2 cups vegetable broth
  • Salt to taste
  • Lime wedges and cilantro for garnish

Instructions

  1. In a pot, heat infused oil over medium heat. Add onion and garlic, sauté until soft.
  2. Stir in curry paste, then add sweet potato, coconut milk, and broth.
  3. Simmer until potatoes are tender (~20 mins). Blend if desired.
  4. Garnish and serve hot.
