Cannabis Butter "Chicken"-Style Vegan Curry

A creamy, spiced curry made with tofu or chickpeas in place of chicken, this vegan comfort dish gets a mellow twist from infused butter or coconut oil.

Ingredients

  • 1 tbsp cannabutter or infused coconut oil
  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 1 tbsp garam masala
  • ½ tsp turmeric
  • 1 tsp paprika
  • 1 can tomato sauce (15 oz)
  • ½ cup coconut cream
  • 1 block firm tofu, cubed (or 1 can chickpeas)
  • Salt to taste
  • Cooked rice to serve

Instructions

  1. Heat both oils in a pan. Sauté onion, garlic, and ginger until fragrant.
  2. Stir in spices, then tomato sauce and coconut cream.
  3. Add tofu or chickpeas. Simmer 15–20 mins.
  4. Serve over rice.

Dosing Tip

1 tbsp cannabutter = ~10mg THC. Split servings accordingly.
